Stace's Triple Chocolate Cake

This is the ultimate chocolate cake for chocolate lovers. It features a rich chocolate sponge, dark chocolate ganache, and white chocolate shavings.

Ingredients

Sponge

  • 200g Dark Chocolate (70%)
  • 200g Unsalted Butter
  • 1 tbsp Instant Coffee Granules
  • 170g Self-raising Flour
  • 1/2 tsp Baking Soda
  • 400g Golden Caster Sugar
  • 50g Cocoa Powder
  • 3 Medium Eggs
  • 75ml Buttermilk

Ganache

  • 200g Dark Chocolate
  • 200ml Double Cream

Instructions

  1. Preheat the oven to 160°C (fan) / 180°C / Gas 4. Grease and line a 20cm round deep cake tin.
  2. Melt the chocolate and butter in a bowl set over a pan of simmering water. Mix the coffee granules into 125ml cold water, then pour into the melted chocolate mixture.
  3. Sift flour, baking soda, sugar and cocoa into a large bowl. Beat the eggs with the buttermilk.
  4. Pour the melted chocolate mixture and the egg mixture into the dry ingredients. Mix until smooth.
  5. Pour into the tin and bake for 1 hour 30 mins or until a skewer comes out clean. Cool in the tin.
  6. Make the ganache: heat the cream until hot (not boiling), pour over chopped chocolate, leave for 2 mins then stir until smooth. Let it set slightly before spreading over the cake.
