Stace's Triple Chocolate Cake

This is the ultimate chocolate cake for chocolate lovers. It features a rich chocolate sponge, dark chocolate ganache, and white chocolate shavings.
Ingredients
Sponge
- 200g Dark Chocolate (70%)
- 200g Unsalted Butter
- 1 tbsp Instant Coffee Granules
- 170g Self-raising Flour
- 1/2 tsp Baking Soda
- 400g Golden Caster Sugar
- 50g Cocoa Powder
- 3 Medium Eggs
- 75ml Buttermilk
Ganache
- 200g Dark Chocolate
- 200ml Double Cream
Instructions
- Preheat the oven to 160°C (fan) / 180°C / Gas 4. Grease and line a 20cm round deep cake tin.
- Melt the chocolate and butter in a bowl set over a pan of simmering water. Mix the coffee granules into 125ml cold water, then pour into the melted chocolate mixture.
- Sift flour, baking soda, sugar and cocoa into a large bowl. Beat the eggs with the buttermilk.
- Pour the melted chocolate mixture and the egg mixture into the dry ingredients. Mix until smooth.
- Pour into the tin and bake for 1 hour 30 mins or until a skewer comes out clean. Cool in the tin.
- Make the ganache: heat the cream until hot (not boiling), pour over chopped chocolate, leave for 2 mins then stir until smooth. Let it set slightly before spreading over the cake.
